My mom cant eat gluten either. I am always looking for things that she likes. Most restaurants have gluten free menus if you ask for them. Uno's has gluten free pizza but you should get it well done otherwise it is too doughy and not good.
Whenever she gets gluten free pasta no matter how long it says to cook it, she cooks it for 20 minutes, also she likes corn based pasta the best. It has the most realistic texture compared to regular pasta.
Also betty crocker started coming out with gluten free baking mixes like cakes and brownies. We just got her some for her birthday and havnt cooked them yet. I also found this stuff called better batter. i just got her some for her birthday, but it is supposed to be amazing. it is a mix of all the differnet kinds of gluten free flours to create a perfect mix.

Trader Joes has the most amazing ginger snaps i have ever had in my life and they are gluten free. they also have a list of all their gluten free foods on their website. you can also look locally. there is a bakery that is about 20 min from my house that makes all gluten free things, but my mom had to go looking for it. you never know, there could be one near you.
And last but not least, one of my favorite meals, along with most of my guys friends, that i have been making for years that is cheap and gluten free. salsa chicken.
you take about a poud of chicken breast, or whatever kind of chicken you like. put it in a pan. dump a jar of salsa evenly on top. crush up some corn tortilla chips and crumble them on top. bake at 350 for an hour. for the last 5 minutes sprinkle some shredded cheese on top, if you want, and then enjoy. you could  also serve with rice if you want.
