I'm not saying that cops don't go on power trips, but the one time I ended having to go to court for an open container violation was probably because I thought I hadn't done anything wrong and was being a smart ass.
A cop is a cop, not a jury, judge or someone else that you might want to convince that you are innocent. The overwhelming majority of times, if you just act sincerely respectful, you will receive the least amount of hassle. They can always haul you in for being uncooperative, but that means headaches for them. I'm just saying that it isn't worth it to argue with a cop.
Also, cops are aware that everyone has a smart phone with a video feature. They know that footage of them is going to be scrutinized. The cops that are doing the stuff that you are describing have to be a minority and they would have to be super careful.
I would however be extra careful at festivals and places where the city hires and deputizes a bunch of part-time cops for an event. I've seen those guys beat the crap out of people.
