Would I still be able to easily land/ride switch on it?
Shoguns have a raised tail more than a full twin tip. Could you land switch on it? Sure, would you want to land switch on these all the time? Probably not. Seth is better for this due to the full twin tail.
What are the pros/cons of a softer or harder flex?
Stiffer is better for skiing hard and fast. When you going mach 10, stiff skis give you more support, more energy transfer, and less flapping and vibrations. You'll be able to push yourself more on a stiffer stick because they are better for hard skiing. If you buy a super stiff ski like moment M1's ect you are pretty much forced to have good form or the ski will kick your ass. If your not on top if it, it's gonna let you know about it pretty dam fast.
Soft skis are easier to ski. You can get away with bad form more easily. You don't need to drive the ski. It's also easier for butters ect and are often more fun for jibbing and messing around. However, if your doing jumps ect they can wash out easily on landings.
It's all about compromise. Whats more important to you? If you have one ski, something like the seth is pretty well rounded.
