basically look for a twin tip with good sidecut if you want something that is good for carving. As for a being good on ice, you want something with a little beef in the construction, look for skis with metal in it.
Honestly if you want a good out of park ski, go for a good all mountain or even race ski. Most all mountain skis will have some what of a turned up tail that helps release turns easier, and also will ski switch decently.
