Not about to drop all of my world shaking innovations in this thread... But I'll help brain storm if we get some more details in this bitch. What type of engineering are you studying? What do you like to do? Where do you live/ go to school?
Lets say something important that i have not mentioned mechanical engineering. Anything that is mechanically oriented and has to do with any physics notions. I live in Canada, Quebec and here we have a 2 years pre-universitary college to prepare us for a great university baccalaureate.

Build a remote control car that can run off solar power so it doesn't need batteries. I fucking hate how I always find remote control cars at my friends' houses but I can't find any batteries for them....
Our capstone team project placed a windmill "farm" on the roof of a building in Columbus, OH. We were able to power the entire building, plus fed some back into the grid for profit. Lot of room for green technology design, teachers eat it up.
