I'm doing the same thing as you, except my board didn't get stolen. I just wanted to have more ways to look kinda dumb. I'm the same height as you, and 10ish pounds less.
For boots, they should be your first purchase priority. Having shitty boots blows and I found that they need to match you, the way you ski, and how you are built WAY more than snowboarding boots do. Picking ski boots should be a much more involved process.
For bindings, I just picked up a pair of FKS 120 because I wanted to get into some more freestyle oriented stuff, and I didn't need anything near the higher DIN of the 140 or 180. My DIN is set at like, 5 right now. I'd assume you're right near there.
Skis, I can't help much. I bought some 122 underfoot twin tip powder skis, which is a really funny joke given the snow this year, but they actually ride pretty damn well on groomed snow, all things considered.
