DUDE! that was SO tight. If I woulda been there we coulda had a three way gainer-bonanza. Where is that?
So stoked on a good made-by-moi dinner. Highlight was the peach salsa.
2 large tomatoes, cored and cleaned
2 peaches (or nectarines, even mangoes), pitted and skinned
1/2 cup red onion, finely chopped
1/2 cup bell pepper, red or orange, finely chopped
1/4 cup (or more to your liking) fresh chopped cilantro
2-3 tablespoons fresh lime juice
2-3 teaspoons sugar
1/4 teaspoon salt
Finely chop the tomatoes, add to a medium sized bowl. Cut peaches and combine to tomatoes. Add red onion, mix, bell pepper and then cilantro. Add the lime juice a tablespoon at a time, along with the sugar a teaspoon at a time, tasting and stirring to satisfaction.
THEN, the secret: it'll taste great at the offset, but you should leave the salsa in the fridge for at least an hour, then take it out when you're ready to serve. Mix it once, and BOOYAKASHA, taste explosion in the mouth. Makes TONS of the stuff.
