Hey Bro,
I have had a stretched ACL all season. The main thing i have done to look after it is making sure i land mostly switch. If i do ever land forward i really make sure i land perfect. Stay away from backseat/awkward landings and you should still be able to ski. I know people that have skied with no ACL, so as long as you ride a bike a lot and work hard at the gym to build up the muscles around your knee you should feel pretty good.
