Heres a cool topping you can do. All you need is tofu and tamari (or soy) sauce, in addition to the regular ingredients in my recipe.
As soon as you put the water to boil on the stove, slice some tofu up. You want 1.5" long strips, about a quarter inch in height and width. Put a dab of the sesame oil in a skillet, and heat it up on high. Pour in a little soy/tamari sauce when you think its hot. Drop the tofu ontop of it and cook it, flipping it around occasionally as the sides brown. You can do this at the same time as the ramen is stewing, and they should be done around the same time. Dump the soup in a bowl and slide the tofu out ontop of it. Mmmmm!
