Nuked eggs are classic.

I have a sausage and cheese omlete, steel cut oats in the morning and then sip a protein smoothie on the car ride up. It's a quick 5 minute prep the night before, then 5 minutes cooking the morning of.

I'll also go bacon, cheese, eggs and instant mashed potatoes in a tupperware the night before. Nuke it morning of, add cilantro, salsa and avacado, tapatio... And a protein smoothie for the ride up.
