What should I do about the sides of my top sheet peeling off and exposing wood? Should I put something on it to prevent water from getting in my skis?

2 part epoxy cut the chips off then put nail polish remover in the chip, then seal it with the epoxy

You will be well served to do this to the skis before you ski them. You can still do it now, then seal up any areas where you see wood.
