Photoshop question (not a photoshop this for me thread!!)

so either i didn't search good enough, or i just suck at searching for stuff, but anyways, how do ppl take certain objects, and place it in another like perfectly. say for instance, the tanner hall pic. how did ppl perfectly outline his head is what i'm asking ( i know how to add it to other pics). did they lasso it?
 
magic wand tool is pretty good for a rookie, just make sure yo adjust the feathering etc. to match the picture you're inserting it into(thats what she said) but yea for a starter thats easiest. otherwise i tend to use masks.
 
i usually just go around with a big eraser around his head and then just copy it out and do small erase touch ups if necessary
