It depends, if you can manage to load up a stiffer ski you'll jump higher, but that's pretty hard to do. It's more a matter of how springy the ski is than how stiff it is.
You should be fine with those skis, just work on your tecnique. I only weigh 160 and I can ollie my friend's 190 Gotamas about a foot, so loading the tails on scratches should be no problem for you.
today i kinda ollied onto a picnic table and like bonked it with my tips. but i dont really count it as an ollie, cuz i think i used my poles quite a bit, but i couldnt tell.
