Pilchuck is nice, i hiked it two years ago and someone had built a few kickers on these rollers about midway up. The bowl to the left of when your climbing looked really good to drop into, but the slide conditions were pretty bad, so we didnt risk it.
Adams is quite a trip for skiing. Doing it now would be ok, but expect lots of crap snow and exposed rocks. Some of the faces you get onto could also require an ice-axe, and also dont plan on doing it in a day.
Going up to Ranier and Mir right now wouldnt be that bad. Sean, Kevin and I did that three years ago (?) back when i had Atomics. We just hiked a bit and built stuff, but it was fun. Mir is quite a hike, and skiing down all the way to the parking lot is insane. I stopped counting how many times my ears popped.
Baker is another area to summer ski at. Its not to shabby if you go up to the ski area mid-summer. I did it last July 3rd and it still had a lot of snow.
I've wanted to so some other peaks, like Glacier (supposedly one of the most difficult of Washington's big five) and Mt Olympus (Im not sure you could effectively ski this either. Its a hell of a hike in just to get to the mountian, let alone snow level).
Theres also a ton of stuff just around snoqualmie as well. This includes Chair Peak, Pinapple Bowl, Granite Peak, Snoqualmie mountian, ect. Basically, if you cross over the ridge thats across from Alpental's ski area, there are about 6 or 7 good sized peaks that have routes to ski.
Stevens pass has less because there arent many roads around it, and all i know around there is that you can hike the ridge across from it.
