Yes, Andy, that is exactly correct. Essentially, the GPU's for the Xbox and Gamecube are made by different companies, both leaders in the Field. The GC uses an ATI, and the Xbox uses a Geforce. They are very close performance wise although the Xbox is still only slightly better in that respect.
As for the Processers, the Gamecube runs a faster FSB than the Xbox as Andy has stated. This means the two are again, relatively close in speed, with the Xbox still the leader of the two. However, the PS2 has even lower FSB than the Xbox, widening the gap between the systems in the other direction. It really does fall quite far behind in this respect.
Again, this is just the specs, it all comes down to games. Alot of Xbox's exclusive title's are being ported to PC making them no longer exclusive, this includes Halo, Splinter Cell, etc. Also, some of its once exclusive title's are availible on other consoles now, such as Dead to Rights (availible on both GC & PS2). Xbox still has several great exclusive titles, such as Mech Assualt, Dead or Alive 3 and Amped.
PS2 has many of their exclusives ported or being ported to the PC. This includes GTA3, Vice City, MGS 2. Again, many titles are still only availible on the system, such as Grand Turismo 3 and Final Fantasy X. Although, the rights to Final Fantasy games are now owned by Nintendo, and the next game will be on GC.
GC typically doesn't allow it's exclusives to be ported to other consoles or the PC. Some good exclusives include Metroid, Resident Evil 0, Super Smash Bros. Melee.
All systems have great games, so anyone is a great decision.
Another thing to consider is DVD drives. The PS2 and Xbox can both play DVDs, with the addition of a remote. The Gamecube cannot, unless you count the Panasonic Q, only availible in Japan and very Expensive. None of the consoles are very adept at playing DVDs, some don't even work.
If cost is a factor, The Xbox & PS2 are approx $299 CDN. Right now, you can get the Xbox with 2 games, an extra controller and a memory card for no extra cost. The Gamecube is cheaper than both other systems by approx $100 CDN.
