I love Nova Scotia, and have spent some time there. These ideas may not work for you, as I do not remember geographic locations and they may be too far a drive. I really have no idea, and do not feel like googling it right now.
Have you seen the Bay of Fundy? That was super cool, biggest tides in the world! There was also a river somewhere that flows backward once or twice a day. Check that out.
The coolest thing I remember in Nova Scotia was Joggins. Go there! There are tons and tons of fossil trees littering the coastline, and you are free to collect amazing fossils. Free! There's a cool visitor center where one guy who has been collecting his entire life showcases his better finds, to give you a good idea of what you are looking for.
I also did a good amount of canoeing in one of the parks. Was it Kethamacoogic or Koodjamaquack? Both are really cool, even if I can't spell their names correctly. Also the best trout fishing I have experienced.
