you're right.. it does help a lot. the first time i ever drove a car was when i got my permit at 15 and my dad took me out in his old 89 S10 beater truck in 10 inches of snow. he told me "be careful, but have fun". lol. learning how to control the car in the worst possible conditions so early on helped me overall more than anything else. i think i'm just as comfortable and relaxed being sideways as i am going in a straight line now.
and you're also right.. the AWD of subaru will help in the snow/ice/etc., but i don't think it's a good first car. i honestly think the best first car would be an EG coupe or hatch (92-95 civic) or a B13 (91-94) Nissan Sentra. they both drive exceptionally well in the snow and shit, and are amazing cars in the summer/good weather. great gas milage, and easy as hell to work on. regardless of the whole 'import' thing, honda's are simple, straight forward, and easy driving.. same as the B13 sentra. that's what makes them good first cars.
to work on a honda/nissan and make it into a project car or just to fix it up a little and make it a perfet reliable car will give a beginner driver all the mechanic abilities that he/she will most likely ever need. and it's simple to get to that point. subarus, while still good cars, are more complicated and much more expensive to work on.. and unless you buy an 05/06 model, you WILL have to work on it and replace parts.. it's just a question of which ones and how soon.
