you would actually be allowed to if it was in a national forest which in Colorado is a lot of the resorts. depending on the resorts rule it is possible

 
1. find a local hill with night skiing2. get contacts from a paintball club (a proper club)

3. negotiate a deal with the mountain to get exclusive use of the hill for a night each week

4. ???

Go for it but don't shoot anywhere above the neck because it is actually dangerous. You should be prepared for any consequences of your actions.

whether a national forest or not. it is illegal to shoot anyone with a paintball MARKER(NOT gun) if that other person is not willing to be shot. soo 1.) unless this guy got full permission from the mtn and all the people using the mtn at that time. 2.) all people would legally have to wear a paintball specific mask. 3.) all markers would have to be at a chrono of 300fps or less legally. Paintball is a extremely fun game but can be dangerous and people whom incorrectly use there gear give paintball a bad name period.
 
paintballs are not actually filled with paint. it is basically vegetable oil and food dye. completely washable the worst you would have is an oil stain no paint.
 
I have heard that a couple years back, at Stowe a crew of snowboarders would roll with airsoft guns occasionally shooting people.
 
When paint balls freeze i don't even wanna talk about how my it hurts, did you think about that? Its like getting shot with rocks. lol But do it. Video it.
 
As long as it provides a good laugh there are not legally allowed to get authorities involved.
