Wow, I just got back from the Seattle Cheese Festival. Hot damn, I'm amped on so much delicious gouda. I had some of the best goat cheese EVER, and some of the blue there was absolutely putrid in smell yet wonderful in flavor. There was also some weird stuff that actually burned my nostrils.

Cheese is a wonderful thing. That is all.

If you like ultra sharp cheddar Black Diamond(Canada) and Grafton(Vermont) both make a sweet 4 year.
 
fuckin' rights you envy us! I eat a shitload of cheese, even though good cheese is ridiculously overpriced here.

The smellier the better is my rule of thumb.

Good cheeses:

-goat cheeses (the not too dry ones)

-tome

-manchego

-roquefort

-brie

-camembert

-reblochon

-applewood smoked cheddar

-mimolette

-gouda with cumin
 
i don't like gruyere or emmental

I however forgot to mention sheep milk cheeses, which are god damn amazing! In particular Etorky, which is from the Pyrennees I believe.
