Changing boot flex

Is there much difference between a 100 and say 120 flex? My current boots are 100 but I had seen a boot fitter a while back who thought I could go higher.

I can ski off piste in crud / choppy conditions. Powder not so much yet (only because don't get often to practice in it).

Height 6 ft weight 205lb

You could absolutely go higher. I ski a 110 at 170lbs for park and i could go higher. Also depends on the boot.
 
I guess my question should be more how much more responsiveness is it going to give me for the investment.

Because I could also wait 5 years until my boots are done and go up then

It’s worth it if you expect to improve. At your size a stiffer boot might feel better anyway. Many people are skiing 120-130 boots who are much smaller. If you have a local shop with used gear a used stiffer boot can usually be found for cheap.

If you are good enough skier, you should be able to know if your boots are holding you back/making it difficult to progress. Do you feel limited by how flexible they are? Then go up. If they feel great and you are still getting better/progressing at your skiing, then wait. But either way it wouldnt hurt for you to go up in flex.
 
based on your description here i think you don’t need a stiffer flex yet. If your only incline that you may want siffer is a boot fitter who told you you could probably use it, you don’t need it. you only need a stiffer flex if you feel your boot folding over when you put alot of pressure into it and it’s getting in your way while skiing.

Which would be during hard carved turns or quick tight turns?

likely shorter punchy turns but it could happen any time you flex the boot hard. you would most easily feel it when landing a jump with your body weight forward. I promise you would know what it feels like if it was an issue. i think you are good for now.
 
I have 120 flex but never notice anything, its nice and tight and never get shinbang. I did get shinbang when I had 90 flex though.
