Depends on what you mean by "affects the performance". I've never even owned a pair of symmetrical skis, but I've always center mounted them. To me, the "performance" gets decreased when I mount them back. I don't like the feeling and prefer to be centered. Because I don't solely care about carving performance. That is just one factor including others like spinning, ollieing, grabbing, riding switch, buttters, etc. When all those factors are included, I get the best performance out of a center mount. But with mounting, a majority of it has to do with preference. The next guy may be completely different from me.
