i dont have personal experince but the word on this site is that the atomic tweaks, head mad trix, and the volkl krama are the best

 
check out libertyskis.com they actually make twin tips that are considered all mtn/carving, ive never ridden them but they look alrighty, salomons are good for carving if ur looking for that

Most of the twins you can buy that arent marketed as either a fat ski, or a jib ski are fine for carving assuming you tune them, even some of the 90+wasited skis are fine for carving if your strong enough. That said I have yet to ride a twin yet that has come close to the oldschool scott p2's with the dimensions of the older 1080s, but with a wood core. The newer p2's are also really good on groomers and you won't beat their performance in the current day twin category if you can actualy get your hands on a pair. I've riden just about all the stuff on the market and they are marginaly beter than the competition, atleast for lively edgehold on icy shit.

 
The high Society skis rip they are wide but dont be fooled the carve better than any twin tip i have skied.

you can carve with virtually any ski as long as you know how to ski it, but some of the better carving twins include: pe's, karmas, pistols, etc etc

Oh yeah, best current twin carving ski I've demoed would be the Elan Mo2, you can rip hard on that ski!

 
I have 176 Elan Mantis 12's that are twin and carve like mofo's. $100 plus shipping. They were the highest end all-mountain twin two seasons ago.

I have the Tweaks and they rip all over. I'm a 40 park 50 all mountain and 10 bc (when I'm out west) and I have yet to find a spot they didnt work well in. They hold an awsome edge. I've had 1080s before but the tweaks are way better. I love them... you will too as long as you dont mind a stiff ski.
