I haven't skied the gypsy or any icelantic for that matter, I have skied the candide 3 and 4.
the 4 was a great ski that handled deep like tinting else but could also performed decently on the hardback. however I was a little concerned that I would break it due to its ultra-lightweight build, it just felt a bit sketchy. It'd be a great deep powder touring backcountry ski.  however the candide is ludicrously expensive. and I would recommend the Volkl Two. it slashes in the pow and charges through crud, you can even get it to rail on groomers. for the price and style of ski your looking at, i would say Volkl Two!
