No, "taken out" most closely means that the buck took him on a date. "Knocked down" more accurately describes what the buck did to the biker.
It's kind of like the difference between BMX biker and Mountain biker (I can't believe I actually have to explain this to you). Sure calling him a BMX biker gets close to describing what he was doing, but calling him a mountain biker is much more accurate.
