Jimmy Page in Stairway or Heartbreaker (where he unknowingly invented hand tapping) for his studio recordings. On the live DVD, he improvs a solo based on the real one on pretty much every song: it's amazing.

i woudl have to say that the solo in nothing else matters by metallica fits that song sooo well. it's got to be the best solo i have ever heard.
