I don't think there are any threads on this, none that I could find anyways. I don't mean throw burgers on the grill BBQ but true Carolina, St. Louis, Memphis, Texas style BBQ? I just got back from competing at Memphis in May finishing 6th in the shoulder division, which was a great experince and taught me alot to improve, met alot of cool people, and reminded me of ski culture as a whole. So who else loves true BBQ and what do you like to cook, cook on, advice, spices, anything Barbeque related.
 
I love the taste but the closest I can make myself if in the crockpot, still good, but not as good as the real deal.
 
And I'm going to try to make a terra cotta smoker this summer, but it is surprisingly hard to find just plain old terra cotta. Most of the stuff Home Depot has is plastic

I'd try making an open pit smoker first. plans are everywhere and as long as you watch the temp really hard to fuck up. Anything pork is hard to ruin as well, especially pork butts
