Balencing exposure

I'm having a little problem in terms of balencing exposure, especially outdoors. Often when I'm taking a picture the exposure which best shows the subject or landscape is very different from the one which best exposes the sky or background. The other day for instance I was taking a picture of some palm trees and in the back ground was a building and the sky. In order to properly expose the palm trees I had to over expose the buildings and sky. What do you guys do to combat this?
 
Use flashes, change the angle you shoot at, or wait for different light.

If you are using B&W film you can also adjust exposure and development to compensate.
