Does anyone else on NS bake? It is a hobby of mine that I wish I would partake in more, such a good way to express myself and create art. Just made this Triple Layer Italian Iced Pecan Cake! Pretty proud of it.

used to make my own bread. now that's an art that can be improved upon over a lifetime.

i'd love to be able to make my own woodburning oven to bake in eventually.

I'm pretty sure I actually saw this on here somewhere. This is about the extent of my baking. Sometimes I like to get crazy and throw in some semi sweet morsels or dark chocolate. As the picture suggests, a scoop of iced cream takes it to a whole new level of awesome.

1/4 cup suger

1/4 flour

pinch of salt

3 tbsp veggie oil

3 tbsp of water

2-3 tbsp of cocoa (i usually go with a little more than 2tbsp, because i fucking love chocolate)
 
One time me and a buddy were baking churros and other stuff as like a movie night/cooking yummy stuff double date but the ladies just sat there and watched us cook it was so lame...i always thought cooking for a date would be fun to do with girls apparently not. Ladies is licking icing off eachothers faces not a fun date idea or were those girls just boring?

I make my own bread, pastries, and generally consider myself an awesome chef. It's good to see other NS'ers getting into the art!
 
I need to get into bread baking more. I used to make Amish bread all the time. Damn that shit is good.
 
I went to chef school and I just plain suck at pastry. Anything that has flour eggs and butter (appart from sick ass sauces) I suck. I'm just not that kind of precision type of guy I like to go off the beaten pat and do whatever I want. I don't like following recipes.

And to anyone that is good at pastry I lift my hat to you, you guys rock! I wish I was good at it.
 
the margin for error in pastries is so small. Especially to get the consistency right. Scones.....Finding someone who is actually good at making them is insanely hard. 90% of people make them way too dry.
 
Exactly, and it's the reason why I don't like pastry, I have no margin to play with to make something different. It's all just precision.

And I have to say. My sister makes one hell of a mean scone. I've had plenty around the world and we even had scones together in england and some places where they make some of the best ones and still I always go back to my sisters scones as being the best.
 
i like to cook and bake. i make a lot of bread, my favorite is fresh cinnamon raisin braided bread. or alaskan blueberry muffins.

muffins

2 cups flour

3 teaspoons baking powder

1/2 teaspoon salt

2 tablespoons sugar

1 egg

1 cup milk

1/4 cup melted butter

1/2 cup berries

mix dry ingredients first and then add the wet ingredients, batter should be lumpy. add (blue/rasp/whatever)berries, and it helps to coat the berries in a little flour before adding them in. bake at 375 for 20-25min. makes about a dozen muffins.

will do. if i have some bananas that i know are going to ripen before i eat them, i will just throw them in the freezer and once i have a few i will make some banana bread.

3-4 ripe bananas

1/3 cup melted butter

1 cup sugar

1 egg beaten

1 teaspoon vanilla

1 teaspoon baking soda

pinch of salt

1 1/2 cup flour

use a wooden spoon to mix butter and bananas then add in sugar, egg, and vanilla. sprinkle in baking soda and salt, mix, add flour, mix and pour into 4x8 pan. bake at 350 for an hour. i recommend experimenting with chocolate chips or brown sugar sprinkled on the top of the loaf.
 
Pleasantly surprised this thread isn't about weed. I made the best banana cake with a toffee glaze the other day.

i would say i am an expert at baking pies. i make the crust and get fresh cherries from the tree in my yard. makes a bomb cherry pie. made a delicious pie yesterday

This is my family recipe for the best pie crust ever. So flaky and simple, doesn't have that rubbery taste of store bought shit. All these measurements are not exacts, I find that at different elevations I have to tinker with the amount of flour needed. The dough shouldn't be slimy once its mixed.

2 c flour

1/2 c sugar

1/2 c unsalted butter

1/2 c canola oil (if you want you can do all oil, I find the addition of butter helps with the texture)

1/4 c water

that's it. mix them together until the flour is blended it, don't over mix if you're doing more of a fully covered pie top. if you mix it a little more it becomes more elastic and less flaky but I find that helps for doing lattice tops. Split the dough in half, use half to cover the bottom and sides of the pie plate, the rest goes on the top. My dad (excellent baker as far as taste goes, but his food isn't very pretty) is a huge fan of just doing a collage of dough blobs on the top, leaving some room in between. Looks like shit, tastes amazing.

Fill with dis shit :

6 large granny smith, or other tart pie apple, peeled and cubed

1 c sugar

1 tsp cinnamon

2 or 3 tbsp corn starch

mix it all together. voila. perfect apple filling. Stick it in the oven at 450 for 10 min then turn it down to 350 for the next 45-60 min. check on it periodically towards the end, once the edges of the crust start to turn brown you know its done. Best served with vanilla ice cream. Mmmmmm

I find that simplicity in baking leads to better results. Not a fan of over seasoning and all that shit. This is hands down my favorite pie because its easy and tastes so good without all the extra crap.

I may get a job at the bakery in my town. I haven't baked much, which really makes me even consider if I can actually be the assistant bread baker. I'm super excited though, the thing that sucks about being assistant bread baker is that work starts at 5 am every morning. I'm just trying to get enough time off to ski.
 
do it!! I usually do a lattice top for it, but the blob method works fine as well. Granny smiths are great in pies.
 
Hahah I could try......but.....I'm an awful baker. I always fuck shit up somehow....all precise n shit.

I'm better off just eating what others make.
 
You gotta practice to get better!! This thread actually inspired me, I think I'm gonna bake some bread today.
 
Here's a good waffles from scratch recipe. Way better than that eggo shit. I usually make a double or triple batch and freeze the leftovers.

1/4 c canola oil

1 egg

1 3/4 c milk

mix dry stuff first then add wet stuff. voila. perfect waffle mix.
 
i worked as a baker all the way through high school! now i make all the pastries/deserts for a very nice restaurant and run the pantry station on the line.

honestly i work about 70 hours a week so i only have one day that i get to cook/bake for myself....but i will get some pictures or recipes thrown up here if anyone is interested.

its basically tastes like you are munching on angel toes. but add some fresh blueberries to those fuckers and GODDAM.
