they both are pretty good bindings, griffon might just be a tad better in the performance area, but im going to have to say that they sth's are going to be lighter!

i got sth 12 mount on last year dumont they are pretty light.

I rode sth 12's all this year. Super nice binding, and pretty light. I like the wide toe piece a lot. Not sure how they compare to Griffons, but they could hold up a little better. Either way i bet you'll like both. As for the FKS, the sth are lighter but the FKS are bomb proof. I had FKS on my pow skis this year, and liked them a lot.

Go for griffons they're super light and work perfect, If I remember it correct griffons is about 1950g for pair and sth12 2030g so the griffons are actually lighter and IMO they perform better.
