Well you can only use Final Cut if you have a Mac because there isn't a PC version. Go with Adobe Premier if you have a PC. And you can use final cut on two monitors to who ever said that because I have done it before.

It will be awhile before a G5 powerbook is released. The G5 processors are huge, and it will take awhile before they can get it down small enough to fit in a laptop.
