White Balance Set on fs 100 and fs700?

Ok so i have been surfing and playing and trying to figure this out for a while. How do you set a custom white balance based off of an 18% gray card or white card? I cant figure out how. This may be a dumb and easy thing to do but hey im lost!

I'm fairly new to the camera, but my workflow for WB has been: Set the WB toggle to A -> focus on white card in the light you'll be shooting -> press the little button next to the WB toggle (two triangle outlines with a solid a square) -> this should then calibrate and give a color temp readout on the bottom right of your LCD.
