Want to start filming and editing skiing but I've never really done it

So next season I am really intrigued to film and edit a ton of skiing. How should I get started into this? Lately all I record with is a gopro hero4 or 5 silver and just using our phones. It works fine but I would like to get some really clear shots. I think I am okay for editing because I have Adobe premier elements 12. What are some tips for what I should do?

Look up ski films. Write down the angles and shots you like and re-create them. Add your own flair in editing or filming

Is a gopro hero 7 on a stick a good compromise for this?

I know the hero 7 has built in stabilization so probably. Would not be quite as smooth as a gimbal but still pretty good.
