I asked a very experienced tech this question a few months ago when I did a course. He said it's not so important with modern bindings but it definitely won't hurt, so you might as well. Turn them all the way down to the lowest setting on the guage, don't go past this because you can take the springs out completely then you might fuck them up if you put them back wrong (unlikely but again, why risk it).
