I asked the shop to mount my marksmans recommended, but they mounted them -1cm from recommenced, or -7cm from center. Is it worth complaining and trying to get new skis?

Definitely take them back, bring the paper work you got when you dropped them off and politely say that you are not happy with the mount. At the very least they should do a refund for the mount and a free remount. They should give you a replacement pair of new skis but since you bought a discounted pair in the summer, they may not. Any decent shop has a policy and is good about botched mounts.
Playing devil's advocate here - K2's are infamous for having their rec lines printed pretty far off from where they're actually supposed to be. I see more K2 rec lines that are a cm or more off than that are correct. It's possible the shop actually measured the ski and mounted it accordingly. Additionally, K2 does their rec lines in a pretty stupid way. They have a "midsole" mark that honestly seems like its just randomly printed somewhere around -5 or -6 from true center (re: it's super inaccurate and inconsistent). They also have a chart on the sidewall that starts at core center and then goes in 1cm increments to -7 where it's labelled "traditional" (what some consider recommended). They could have also just mounted it right on the "traditional" mount line.
1cm should be just enough room to move, but I'd see what the shop is willing to do for you as far as skis though. A free remount is definitely in order if it's not where you asked for.
Personally I like marks at center, but -2 is tits too. Depends on what you want them for, but I'd go forward from rec on the marks, especially if you're gonna remount them anyway. Just my 1st post .02

They don’t carry marksmans anymore because they were replaced by the mindbender, and I don’t want one of those. Will see what I can do though
