Hey Man, feels for the knee, mine is a total mess so I know where you're at.
Had a menisectomy back in September 2015, managed 2 get 8 days riding in this year.
Take it gentle as it will be sore when you first ski, just gotta build up slow and make sure you have the leg strength etc. I found any flat landings hurt like hell and it would take a little while for the pain to numb down again any jump with a soft landing were totally cool though.
Also be careful, I thought I was all healed up but has a small slam (5 months post op) and it's put me out with mega knee pain and potentially re-busted what was left so in my view I'd give it a full year before you get back to riding at anything like full capacity, just to save you more years of aggro.
Trust me I'm on my third year in a row where my knee has failed me and that outlook is not cool, take the time and get it right and you'll be way better off!
