Just picked up some 189cm 2016 Shreditor 112s. I consider myself an extremely strong / aggressive skiier but all things considered my skiing technique leaves a lot to be desired.

I've never skiied on a ski this wide before so I don't know what to expect. Would love to mount it as close to center as possible without giving up control on the rest of the mountain. Thoughts?

Same ski, but I'm 3" and 30lbs smaller. I went with -2.5 and love them there for all mountain, but I would say maybe -3.5-4.5 at least since you are bigger,

Although, that really depends on where you are skiing and what you plan on using them for...

I live in the southeast, so I don't get to ski much. When I do, never go off-piste. The control over the playfulness of the ski is more important to me than the control on groomers, etc. I'm more excited to learning some simple tricks and stuff than I am to just "ski" on them.

If you're never going off-piste you'd probably be better off looking at the Shreditor 92 or 102

Agreed...for a intermediate/beginner...rocking 112 shreditors for in bounds riding in the south east seems a bit over the top. Than again...do what you want. I would prob go -2 or 3 back on mine if I had that
