i also love salmon, and tuna when it's in sushi. i'll eat spicy tuna rolls all damn day until mercury poisoning takes over my body and turns me into the silver surfer. that's what happens right?

I work as a fish monger and I can tell you what is the best salmon. Generally, there are three types of salmon. Farm raised, naturally raised, and wild. While most people think wild is the best because it is the most expensive, it is by far the least oily and least flavorful salmon out there. Over rated. Naturally raised is the perfect balance i think because it is raised in the wild in fenced off areas. Still has lots of flavor, at the same time has a good fat content creating lots of flavor. Farm raised is still not bad at all very good fish but a very oily fish which is more personal preference. The wild tends to be meatier as well because it is wild and has more muscle. The farm and natural "flake" off more because of more fat content.
 
Although salmon is good, it's not the best. Probably the best fish I've ever tasted was a rainbow trout I caught last year.

Also good- tilapia. I made some of that in my deep fryer in batter, and it was sooooo good.
 
If you are calling walleye pickerel than you are sadly mistaken. People often refer to walleye as pickerel but the name actually belongs to the Chain Pickerel. Walleye have no relation to the pike or pickerel family

I'm all about. Salmon, Bluefin tuna. Swordfish, Halibut and Striped Bass. Not educated in freshwater stuff
 
surprised to see no one has said Black Marlin i guess most people dont get the chance to try black marlin. eating it raw is amazing like at a sushi place it melts in your mouth shit is soooo good.

halibut is definitely one of my favorites. growing up in seattle i ate enough salmon for a life time, i have been sick of salmon for the last 5 years.
 
yo at this sushi place in simsbury ct called sakimura its so awesome they have raw salmon that litterally slides down your throat and tastes sooo good! go if you can
 
Holy shit.

Sockeye is by FAR the best salmon out there. Nothing else compares. Then spring/chinook, then coho. Anything else like Atlantic or chum is only good for smoking, and then, not very.

Farm raised fish is terrible.

For west coast non-tidal fish, steelhead and kokanee can't be beaten. Rainbows and other interior lake salmonids are good, but can taste "muddy" due to algae contents in the lakes and can have mushy flesh in warmer lakes.

With all fish, the fresher, the better.

I'm not going to get into walleye/pike/pickerell/jack fish/bass/halibut/snapper because this thread is about salmonids.

 
i've been cooking a lot of tilapia lately but thats just cause it's cheap. but reading the thread definitely temps me to pick up some salmon.
 
You should all know that the worlds fish stocks are not looking good.It boggles my mind that the public doesnt seem to give a shit about this, we are running out of fish!
