Regarding cappuccino

all you makers of cappuccino...i am having trouble with my frothing, to those of you who make cappuccino, what do you use as your frother (milk, milk cream combo, etc)? and what is your frothing technique?
 
i use a steam wand.. the best way to get amazing dense foam is to hold your pitcher on an angle and make sure the tip of the steam wand is just below the surface of the milk so that it's completely submerged (but if you were to lower your pitcher it would make large bubbles/break the surface.) your milk should start to get "sucked" in a sort of circular pattern toward the steam wand.
you'll know that you're making foam by the volume of milk in your pitcher increasing, it's pretty easy to see. start with your pitcher like 2/3 full so you don't spill. once you are finished steaming (to like 160-170 degrees) your milk shouldn't look like there's any foam (ie. no large bubbles) because it's nice and dense and perfect. does that make sense? kind of..?
anyway before you start to pour, swirl your milk around to mish together the milk and foam, then pour down the side of the mug (once your shots are already in the mug) this will create a really nice dark layer of crema on top of your latte (if it is a latte) but for your capp, just pour until all your foam is piled on top... should be a 1:1 milk/foam ratio for a cappuccino. mmmmm.

oh i just read your post again... you can use any kind of milk or a milk/cream mixture it doesn't make a difference!
 
yeah probably. im not getting any new gear this year unless i find something cool.. its mostly for my brother.. i'm just excited to go up tomorrow :)
 
Im from vancouver and lived in whistler for a year and a half so i thought i would chime in too. not that i have anything to contribute
 
i also use a steam stick and i start with the cup about half full. the problem i am having is i am getting big bubbles and the cup eventually over flows if i keep going...what am i doing wrong?
 
i don't work there anymore.. but i lived in whis this summer and my ex bf worked at the starbucks under earls so i still get free drinks. scoreeeee
 
hold the steam wand like JUST under the surface but still fully submerged (so you don't hear any air).. you have to be patient and just find the right spot! getting really big bubbles means that you are holding it too far out of the milk.
 
i need just the tip (just for a second, just to see how it feels) just under the surface right? I have tried just under the surface as well as at the bottom of the cup with the same results
 
ha. just the tip, right under the surface.. its tricky to get it right but you will know when you do from the sound it makes...
