Proper all mountain ski size

Ok so we are looking at getting my dad a new pair of skis for his birthday but I am struggling over the issue of what size to get. He is 5'11'' and 210 pounds. Skis mostly groomers but occasionally dips into the trees or moguls. Decent skier, can make dynamic turns and go down pretty much any groomed run just fine. I was thinking a 181? Also I know the stiffness of the ski matters so I'll include that I am looking at a candide yard. (Gotta keep it cheap) help please
 
Go to a shop and get their opinion. A lot of older folks ski and have skis that function way differently than the younger generation is used to. For example my dad who is a strongish who skis a lot of all mountain and pow, he's 6'1 and riding a 174 and absolutely loves it. I got him to use my 185's a few years back and he just hated riding them compared to his short little turny skis. So yeah, I think a shop who specializes in his style of skiing will be able to pick out a ski and size much better than anyone on here would be able to.
 
As said before it depends on the ski. If its a stiff ski you can go shorter if its softer you would genrally go slightly longer. I was thinking about the 176cm size at first but as I said it will depend on the ski.

Regarding the CoreUpts has he always skied on twins. If he is more used to not twin tips he may strugle. Twins skid the tail of the ski allot more then directiona skis, so if he has always skied on conventional skis you would proberbly be better off with a non twin tip. All mountain skis tend not to be too expensive nd there the biggest catogory of skis so you have so much choice.
