ingredients:
-farm fresh eggs (brown ones are the best)
-organic onions (i prefer yellow)
-organic mushrooms (chanterelles or portabella)
-organic avocado (soft, dent-able)
-cooked bacon or ham
-butter
preperation:
1) cut the bacon or ham into little pieces
2) cut the mushrooms and onion into little pieces and put them in a medium sized pan.
3) if you have an electric stove, turn it to medium. gas stoves go to medium-low. throw in mushrooms and onions.
4) wait to add butter until the onions are a little toasted on the outside. put just enough in to coat the veggies (about one tablespoon)
5) beat your eggs in a bowl until they're nice and blended. add a splash of milk if you like them fluffy.
6) once the onions are pale and opaque-looking, add eggs.
7) scrape the pan to keep the eggs from burning and sticking. i usually scrape from the outside of the pan inward, all the way around.
8) when the eggs start firming up, add the bacon or ham and the avocado. cook until the eggs are a desired firmness.
9) remove from heat, scrape onto a plate, and enjoy.
