Mounting.

My boots are a size too big (29.5) and my skis are mounted with griffons for that size. if i get 28.5 boots do i need to get new skis or can i remount them?
 
Its going to depend on the BSL of the new boots. They could be close to your current ones or they might be quite a bit different. you might not even have to remount if they are close enough and you can set the forward pressure correctly. Also you could mount forward or back a few cm to move the new hole further from the old ones if needed.

if i move it forward wouldn't it put the ski off centre?
 
Yeah you don't need new skis just adjust your bindings they might be a half cm or full cm diffrent but you won't feel it and if you do you can get used to it or you can just remount your skis if you really care that much
