anyways, they can still mount your bindings without boots, but then you'd need to bring your boots along to have your bindings adjusted to fit your boots. so, it's silly to go without boots. Take your skis, boot(s), and bindings along and you'll be set.
No it isn't, I never bring my boots. Just check the mm rating on the bottom and they can do it without. Or find a similar boot in the store. But you really should know your mm rating.
i worked in shops my whole life, take the fuckin boot with you. they need it to put in the jig to make sure its the correct lenth, then they need it to put in the binding after they are mounted to check forward pressure. and they have to inspect the boot also to check the afd's and shit.

the best thing you can do is bring nothing to the shop. Leave one ski at home but bring both boots. It is essential that you get one riser plates on your toepieces only, so you can sit in the back seat better to manuever in powder. Also, tell them not to screw the binding in. It adds weight and puts holes in your skis. Just have them glue it down. Apoxy adds too much weight. Lastly, always use tyrolia or marker bindings so even with the din at 16 you can still pop out easily.
spinks is right, that one toe piece makes a world of difference. personally i like to use epoxy to hold my binding down rather than apoxy but hey thats just me.

It's a legal thing. You sign a waiver saying basically that the shop is not responsible if you get hurt because your skis did / didn't come off. They might do it without the boot, but that makes the waiver void, and they could get sued if something bad happens.
