If you're solely using these for a jib ski in light pow and crud, center should be good. If you're looking for performance, -2.5. That's were eric pollards recommended is on the 108 waist models (and i think the 104s). Pow performance is prime, switch is still pretty good, carving is nice and overall its pretty solid.

I got a pair of 2011/2012 SFBs and I got mine at -2cm. For me its perfect and I feel like its a great feeling for all-mountain ripping and more space in front of my toes to charge and turn tighter.
If you have the money to blow and really want to go all out with no compromises then I would say get some Schizo bindings. You can probably get last season's or the season's before for new for around 100-200 off of retail.
I did mine so the +3cm mark on the schizos are at true center of the skis so If need be I can go back a full 6cm so I can vary between true center skiing, -1cm, -2/-2.5 cm and all the way back to -6cm (just in case because you never know).
The downside of doing so is that they are a heavier binding in comparison to FKS/Pivots and markers and there are more parts that can break because there are just more parts.
I can't speak for the general population, but I picked up some Jester Schizos from the season before (This was I think in either 2015 or 2014 The blue and yellow ones) brand in from my shop for $300 which included mounting and I have had no issues what so ever with them since I know its a heavy binding that can take a beating, even after a couple seasons of being a daily driver.
