If I remember correctly from checking them out in the shop, (haven't skied the Blend since before it had a rocker profile) the blend is a decent amount softer, has a longer, less pronounced rocker to the PB&J but has almost identical dimensions. The PB&J is handmade, while the Blend is definitely not handmade. I loooove the stability of the PB&J. Even though it's got a big rocker, it has a decent effective edge (about 140cm on the 172cm model) and the stiffness of the ski lets you go mach-titties on the groomers with no noticeable chatter whatsoever.
Personally, I wouldn't look for a ski by though waist width though. Find a ski that intrigues you and your style of skiing, research it, and see if you can Demo/try it out if possible. I didn't actually try out the PB&Js before buying them (nobody demos them in CO) but I'm glad I researched the ski a lot and have skied so many skis in my life that I knew how it would ski. It definitely has surpassed my expectations though. I've skied plenty of boxes/rails on them too but I'm actually contemplating putting inserts in them so I can swap them between my alpine bindings and a pair of dynafit bindings. That's how versatile they are.
You should also look into the Volkl Bridge. They might hold an edge better than either of these skis when it's icy but have slightly smaller dimensions. Their stiffer and heavier than either the Blend or PB&J, and have a much longer but more gradual rocker.... just to put things in perspective.
