Making hats

I know this isn;t the right place to post this but the cult page is close so can any one tell me how to make a hat bigger and smaller when crocheting it?

When you make your pancake, or crocheting out when you start your hat, keep going out until its the size of your hand. When you wall your hat, just keep going until it fits you.

How do I keep going out for the pancake...I made one which ended u being way too small especially at the top..

cus like I just keep crocheting around the circle but after like 6 rows it starts to cave in or w/e

So on the pancake do I do a single then a double then a single then a double etc?
