Help with making dvds

so i agreed to help a group at my college make dvds of their shows. i have little experiance with this.
i got a dvd of one of their shows, so for this one i was planning on ripping the iso and just burning it to other dvd's to make copies. this should work, right? whats a good program to rip an iso? i am using mac the ripper right now but i am pretty sure that it will only give me the video/audio folders from the dvd.
for the second dvd, i have 2 sections of 40 min, each being about 9 gigs from tapes. the footage is dv. i want to put both on one dvd (thats what they want). whats the best way to go about this? i have never made dvd's but can use final cut pretty well so i was going to drag it all into a timeline and try to export it so it fits on the 4.7 gig discs. ive never exported a movie this long: what are the settings i should be looking at for getting this amount of data to fit onto the disc?
 
for your size problem, you could use double layer dvds, which have about twice as much space, but are about twice as expensive
