That depends a lot on where you ski and how you like to ski. That's a super traditional, frontside-oriented resort ski. It's not particularly light, and it certainly wouldn't be my first choice as a touring ski. I'd personally want something wider (I ski in CO for reference) and with way less camber, more tail rocker, and less sidecut to deal with variable conditions a bit better.
All that said, there's nothing preventing you from putting a touring binding on any ski. With skins and touring bindings, literally any ski will go uphill, it's just a matter of how much you care about weight on the up, and what kind of performance you're looking for on the way down. The only real situation where I think I'd like the Sabre 89 as a touring ski would be for spring couloirs where I'd probably like the camber and narrow footprint, but yeah, definitely not my first choice for an all-around touring ski. I'd put an alpine binding on it and use it for days at the resort when it hasn't snowed in a while.
