you want to take pictures from an angle and location which makes the jump look bigger, not smaller. Try taking the picture from below the jump, either at the landing, side, or at the side of the lip. If you are looking up at the skier, it will make it seem like the skier is higher up. Angle and position are definately the most important non-camera aspects of taking a good shot.
as for what to take. don't take pictures of spins cuz they dont look right in pictures, just take tweaked to shit grabs, and inverts. unless you are taking a sequence shot.

360 grabs can look good tweaked because it make the pic look great if the person is tweaking something and looking over their shoulder... you can also get pretty interesting shots of mistys if the person's body is all twisted up.
it's really all just a personal taste and eye for it. Find spots that you like to shoot from. and walk to some spots that you don't think you'll like and check it out. The biggest deal with me is trying to keep the rider as big as I can in the lens. I love close shots. they make me feel all warm and fuzzy. You might like shots that feel spacy though. Just find what you like and take them. As for what should bein the picture: Skier, Jump, sky, and cool background!!! it's the most over looked part of photography is what is in the background. Then just get your trigger finger good and go out shooting.
I have better ones where people are skiiing I just thought the post was about just photos of non-skiing stuff. Thats the best one like that. I have another one of the base towrope and all of the people trying to get on it. It makes me laugh when I see it. Suckers waiting in the mob of people.
