Gingerbread Man Recipe?

Im craving some gingerbread men, and im wondering if anyone on ns has any good recipes to make em. Preferably SOFT and even after a few days from being made, still soft.

And yeah i did google, for a while. But most look like they would turn out hard and shitty, so i was wondering if NS new any GOOD soft recipes.
