The amount of hype surrounding this game is unreal. It's metacritic is 95, and it isnt even out. This review says it all i think.

What I mean is; are people really going to play this game for the 300+ hours they say it will be? That's rediculous

i've been playing for three hours. i've seen a dragon but when do i get to fly one?

The 300 hours is referring to the built in formal questing. Most people will not "complete" skyrim, as it isnt meant to ever be finished. 300 hours is the estimated time it would take to complete all of the quests, but your experience won't be hurt if you don't finish everything. Thats what makes the game amazing. It has an infinite amount of playability.
